Prize Winning Coconut Pound Cake Recipe
This was a winning recipe in a department store contest in 1980. So rich and delicious. This is a sure winner with coconut lovers, and you will be the winning cook when you make it. :)

Ingredients
  • 3 cups sugar
  • 3 sticks unsalted butter, room temperature
  • 6 eggs
  • 3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 8 ounce carton sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 6 ounce package frozen coconut

Directions
  1. In mixer bowl with an electric mixer, cream butter and sugar unfil fluffy
  2. Add eggs, one at a time beating well after each addition
  3. Mix flour, salt and soda together in a bowl
  4. Add to creamed mixture, a little at a time
  5. Stir in sour cream
  6. Beat well
  7. Add flavorings
  8. Stir in coconut
  9. Pour into a greased and floured 10 inch tube pan
  10. Bake for 1-1/2 hours at 325 degrees (adjust to your oven)
  11. Cool for 10 minutes in pan
  12. Remove from pan to wire rack
  13. Delicious, and best if made the day before

I have got to bake this for my co-worker's birthday on the 25th! She said she love coconut cake and I love baking pound cakes. Perfect!


I don't know if I'm missing it entirely, but where in the directions does it instruct when/how to add the coconut to the batter? And if the instructions aren't clear ... how did this recipe rate 5 stars, not once, but six times??? Another prime example of how seriously flawed the so-called "rating" system is on this site.


A step was mistakedly left out in the instructions on when and how to add the coconut to the batter. That information has now been added. I apologize for any confusion that this might have caused.

8. Stir in coconut


Obviously she forgot to add that last tiny step, let's not nitpick. It happens, and one would assume all one needs to do is just throw in the coconut and stir...mystery solved!!!!!!!!!!!
