How to make it

  • In mixer bowl with an electric mixer, cream butter and sugar unfil fluffy
  • Add eggs, one at a time beating well after each addition
  • Mix flour, salt and soda together in a bowl
  • Add to creamed mixture, a little at a time
  • Stir in sour cream
  • Beat well
  • Add flavorings
  • Stir in coconut
  • Pour into a greased and floured 10 inch tube pan
  • Bake for 1-1/2 hours at 325 degrees (adjust to your oven)
  • Cool for 10 minutes in pan
  • Remove from pan to wire rack
  • Delicious, and best if made the day before

    This was DELICOUS and easy. All the buttery goodness of a great pound cake and very moist with the richness of creamy coconut. This one will be a favorite and a must do for something different or special occasions.

    Obviously she forgot to add that last tiny step, let's not nitpick. It happens, and one would assume all one needs to do is just throw in the coconut and stir...mystery solved!!!!!!!!!!!

    A step was mistakedly left out in the instructions on when and how to add the coconut to the batter. That information has now been added. I apologize for any confusion that this might have caused.

    I don't know if I'm missing it entirely, but where in the directions does it instruct when/how to add the coconut to the batter? And if the instructions aren't clear ... how did this recipe rate 5 stars, not once, but six times??? Another prime example of how seriously flawed the so-called "rating" system is on this site.
