Chicken Pepperonata

- 8 skinless chicken thighs shopping list
- 2 Tbs. Whole-wheat flour shopping list
- 2 Tbs. olive oil shopping list
- 1 small onion, thinly sliced shopping list
- 1 garlic clove, crushed shopping list
- 1 each large Red, Yellow, and green bell peppers, seeded and thinly sliced shopping list
- 14 ounce can chopped tomatoes shopping list
- 1 Tbs. chopped oregano shopping list
- salt and Pepper shopping list
How to make it
- Be sure all skin and visible fat is removed from the chicken thighs.
- Toss chicken in the flour.
- Heat the oil in a wide pan and fry the chicken quickly until sealed and lightly browned, then remove from the pan.
- Add the onion to the pan and gently saute until soft.
- Add garlic, bell peppers, tomatoes, and oregano.
- Bring to a boil, stirring.
- Arrange the chicken on top of the vegetables. Season well with salt and pepper, then cover the pan tightly. Simmer for 20-25 minutes, or until chicken is completely cooked through and tender.
- Serve with crusty whole-wheat bread.
