How to make it

  • Be sure all skin and visible fat is removed from the chicken thighs.
  • Toss chicken in the flour.
  • Heat the oil in a wide pan and fry the chicken quickly until sealed and lightly browned, then remove from the pan.
  • Add the onion to the pan and gently saute until soft.
  • Add garlic, bell peppers, tomatoes, and oregano.
  • Bring to a boil, stirring.
  • Arrange the chicken on top of the vegetables. Season well with salt and pepper, then cover the pan tightly. Simmer for 20-25 minutes, or until chicken is completely cooked through and tender.
  • Serve with crusty whole-wheat bread.
