Ingredients
  • 8 Skinless Chicken Thighs
  • 2 Tbs. Whole-Wheat Flour
  • 2 Tbs. Olive Oil
  • 1 small Onion, thinly sliced
  • 1 Garlic Clove, crushed
  • 1 each large Red, Yellow, and Green Bell Peppers, seeded and thinly sliced
  • 14 ounce can chopped Tomatoes
  • 1 Tbs. chopped Oregano
  • Salt and Pepper

Directions
  1. Be sure all skin and visible fat is removed from the chicken thighs.
  2. Toss chicken in the flour.
  3. Heat the oil in a wide pan and fry the chicken quickly until sealed and lightly browned, then remove from the pan.
  4. Add the onion to the pan and gently saute until soft.
  5. Add garlic, bell peppers, tomatoes, and oregano.
  6. Bring to a boil, stirring.
  7. Arrange the chicken on top of the vegetables. Season well with salt and pepper, then cover the pan tightly. Simmer for 20-25 minutes, or until chicken is completely cooked through and tender.
  8. Serve with crusty whole-wheat bread.
