How to make it

  • Melt the butter and saute the garlic gently without browning, stirring, for 1 minute.
  • Remove from the heat and stir in the parsley, the ricotta, Parmesan, bread crumbs and seasoning.
  • Carefully loosen the skin around the chicken drumsticks.
  • Push about 1 Tbs. of the stuffing under the skin of each drumstick.
  • Arrange the drumsticks in a wide roasting pan.
  • Bake in preheated oven at 375 degrees for about 45 minutes, until golden.
  • Serve hot or cold, garnished with lemon slices.
