These are great for informal parties. They can be prepared for cooking a day in advance to bake in the oven or barbeque. From, Classic Chicken Recipes.

Ingredients
  • 1 Tbs. Butter
  • 1 Garlic Clove, crushed
  • 3 Tbs. chopped fresh Parsley
  • 1/2 Cup Ricotta cheese
  • 4 Tbs. grated Parmesan Cheese (can use any strongly flavored cheese instead of the Parmesan such as Sharp Cheddar)
  • 3 Tbs. fresh Bread Crumbs
  • 12 Chicken Drumsticks
  • Salt and Pepper
  • Lemon slices, to garnish

Directions
  1. Melt the butter and saute the garlic gently without browning, stirring, for 1 minute.
  2. Remove from the heat and stir in the parsley, the ricotta, Parmesan, bread crumbs and seasoning.
  3. Carefully loosen the skin around the chicken drumsticks.
  4. Push about 1 Tbs. of the stuffing under the skin of each drumstick.
  5. Arrange the drumsticks in a wide roasting pan.
  6. Bake in preheated oven at 375 degrees for about 45 minutes, until golden.
  7. Serve hot or cold, garnished with lemon slices.
