Easy Zippy Beans and Rice

- 1 can (15 oz) black beans, rinsed and drained shopping list
- 1 can (10 oz) diced tomatoes with green chilies, undrained shopping list
- 1 C frozen corn shopping list
- 3/4 C water shopping list
- 1 tsp. salt, optional shopping list
- 1 C uncooked instant white or brown rice ( I used white) shopping list
- 1 green onion, sliced shopping list
How to make it
- In a skillet, combine the beans, tomatoes, corn, water, and salt if desired.
- Bring to a boil; stir in rice.
- Cover and remove from the heat.
- Let stand for 5 minutes or until liquid is absorbed.
- Sprinkle with green onion before serving.

I really loved how quick this was. Very good but not very zippy and I don't like heat. I sprinkled some chipotle chili pepper powder in mine. I also used way more than one green onion. I am going to use this with some cheese in burritos.
