How to make it

  • In a skillet, combine the beans, tomatoes, corn, water, and salt if desired.
  • Bring to a boil; stir in rice.
  • Cover and remove from the heat.
  • Let stand for 5 minutes or until liquid is absorbed.
  • Sprinkle with green onion before serving.

    I really loved how quick this was. Very good but not very zippy and I don't like heat. I sprinkled some chipotle chili pepper powder in mine. I also used way more than one green onion. I am going to use this with some cheese in burritos.
