Chili Fried Potatoes

- 5 medium potatoes, peeled and sliced thin shopping list
- Hot bacon drippings, oil, or Crisco for frying shopping list
- salt and pepper to taste shopping list
- 2 teaspoons chili powder, more or less to taste shopping list
- 1 small onion, chopped shopping list
How to make it
- Prepare potatoes
- In skillet, heat drippings oil or Crisco
- Add potatoes, sprinkle with salt and pepper
- Cover and fry over medium heat, turning occasionally, until almost tender and lightly browned
- Remove lid, and sprinkle with chili powder
- Add the chopped onion
- Increase heat, and finish cooking, turning as needed, until potatoes are nice and brown
- Drain on paper towels

These were great!! Instead of slicing thin, I just cubed them so they would cook up evenly in my cast iron. Bacon/bacon grease are a perfect match for potatoes, loved this :) Added to the new IMI -----------> more
