Upsidedown Country Pie

- CRUST: shopping list
- no more than 1 pound ground chuck shopping list
- 1/2 cup seasoned bread crumbs shopping list
- 1/2 cup diced peppers shopping list
- 1/2 cup diced onions shopping list
- 1/2 cup tomato sauce shopping list
- salt & pepper shopping list
- FILLING: shopping list
- 1+1/3 cups Minute Rice shopping list
- 1+1/2 cups tomato sauce shopping list
- 1 cup water shopping list
- 1 cup sharp cheddar cheese, shredded (plus more for top) shopping list
- salt & pepper shopping list
How to make it
- Mix together crust inredients like you would a meatloaf.
- Press into a deep-dish pie plate ( I use my cast iron frying pan).
- shape into a pie crust leaving a well in the center
- Mix together all filling ingredients. Pour into well. It will be wet and loose, but it will become firm and dense
- Cover with foil and bake at 350 for 30 minutes; remove foil; top with reserved cheese and bake another 15 minutes
