How to make it

  • fry the grated onions in oil
  • fry the potatoes in oil
  • marinate meat with spices and fried onions{save some fried onions to place on top of rice } for several hours? overnight
  • at the bottom of a couldron {large pot for mass cooking ,put oil
  • then the marinated meat ,boiled brown lentils.then the fried potatoes
  • finally top with the rice and the left over fried onions ,with the blobs of the ghee
  • seal the pots with a double layer of foil

    Actually, if what you say is true, then both Mumtaz and Eshana Suleman should owe credit to the South African cookery book Indian Delights by Zuleikha Mayet, in the chapter Mass Cooking, which looking at the book right now, appears to have been taken practically word for word. And, as per the acknowledgement of the said Editor of the book, not excluding all the beautiful women and men who made this book a tried and trusted boon for many new and young brides.     Salaams Mumtaz. This mass biryani recipe is Eshana Suleman's recipe an admin member from Grey Street Casbah Recipe (GSCR) FB group. you have tweaked it ever so slight. I do hope that you are crediting Eshana for this awesome recipe. Shukraan

    You have not answered the query for rice..whether it was cooked or raw..what did u do with the tomato puree? You instructions are insufficlent..how can a beginner use the recipe!

    Wow this sounds awesome GF but I'm wondering about the liquid required to cook the rice? Unless you mean rice that is already cooked? I'd really like to try this (scaled down for a home party of course)but I wouldn't dare proceed till I've really understood the recipe and I think perhaps I have misunderstood it?
