Gloriously Glamorous Pineapple Pie

- 3 egg whites shopping list
- 1 cup + 1 tablespoon sugar shopping list
- 1 teaspoon vanilla shopping list
- 21 crushed Ritz or similar butter crackers shopping list
- 2/3 cup chopped nuts(any kind) shopping list
- 1 package (8 oz) cream cheese, softened shopping list
- 3/4 cup confectioners sugar shopping list
- 1 cup heavy cream shopping list
- 1 can(8oz)crushed unsweetened pineapple, drained shopping list
- Chopped nuts for garnish shopping list
How to make it
- Beat egg whites until still, then beat in 1 cup sugar and vanilla gradually.
- Fold in cracker crumbs and nuts.
- Spread in nonstick or lighly greased 9 inch pie pan
- Bake at 350 degrees F for 30 minutes, then cool.
- Blend cream cheese with confectioner's sugar and spread over baked crust.
- Beat cream with remaining 1 tablespoon sugar until stiff, and fold in pineapple.
- Spread over pie and refrigerate 2 hours or more.
- Decorate with a few chopped nuts if desired.
- Serves 8
