Ingredients

How to make it

  • Beat egg whites until still, then beat in 1 cup sugar and vanilla gradually.
  • Fold in cracker crumbs and nuts.
  • Spread in nonstick or lighly greased 9 inch pie pan
  • Bake at 350 degrees F for 30 minutes, then cool.
  • Blend cream cheese with confectioner's sugar and spread over baked crust.
  • Beat cream with remaining 1 tablespoon sugar until stiff, and fold in pineapple.
  • Spread over pie and refrigerate 2 hours or more.
  • Decorate with a few chopped nuts if desired.
  • Serves 8

    My daughter works at a fresh fruit arrangement franchise. She brings home TONS of fresh pineapple daily. We cannot use it up fast enough! I am always looking for pineapple recipes. Thanks for this post!
