Shrimp and Grits

- For the shrimp & sauce: shopping list
- 2 cups chopped bacon, cooked and chopped shopping list
- 3 T olive oil shopping list
- 1 ½ lbs shrimp shopping list
- salt/pepper to taste shopping list
- 3 t minced garlic shopping list
- 3 cups slice white mushrooms shopping list
- 3 T white wine shopping list
- 2 T lemon juice shopping list
- 2 cups chopped scallions shopping list
- For the smoked gouda grits: shopping list
- 6 cups chicken broth shopping list
- 2 cups milk shopping list
- 1/2 t pepper shopping list
- garlic to taste (I usually use roasted garlic) shopping list
- 2 cups uncooked quick cooking grits shopping list
- 1 2/3 cups shredded smoked gouda cheese (a 7 oz. wheel is about right) shopping list
- 3 T butter shopping list
- red pepper to taste shopping list
- louisiana hot sauce to taste shopping list
How to make it
- For the grits:
- Bring first 4 ingredients to a boil in a medium saucepan
- Gradually whisk in grits and red pepper. DO NOT ADD ANY SALT.
- Cover, reduce heat, and simmer, stirring occasionally, 5 minutes or until thickened (I cook them longer because I like them a little thicker).
- Add cheese, butter, and hot sauce, stirring until melted.
- For the shrimp & sauce:
- Heat a large skillet until very hot and add olive oil and two tablespoons of bacon grease.
- As the oil begins to smoke, toss in shrimp.
- Stir shrimp until it begins to turn pink.
- Stir in minced garlic and bacon bits.
- Toss in mushrooms.
- Add lemon juice and wine, stir to about 30 seconds until all is covered well.
- Toss in scallions and cook until done.
- Serve shrimp over cheese grits.
