Ingredients

1 small red or green bell pepper, julienned

1/2 small sweet or red onion, cut into thin wedges

2 t cannola oil

8 oz shelled, deveined uncooked med shrimp

1/4 c chipotle-flavored salsa, for kickier flavor add dash of chipotle hot pepper sauce

4 T cilantro, chopped

4 (6") corn tortillas, warmed

1/4 c purchased guacamole

lime wedges for garnish

Directions

Cook pepper and onion in oil in large skillet over med-high heat 3 minutes. Add shrimp, cook 3 to 4 minutes or until shrimp just turn pink. Add salsa, cook 1 min. Stir in 2 T of the cilantro.

Spoon into warm tortillas, top with guacamole and remaining 2 T cilantro. Serve with lime wedges.
