Ingredients

How to make it

  • Remove the skin from the chicken quarters if desired.
  • Arrange a layer of potatoes in the bottom of a wide casserole.
  • Season to taste with salt and pepper, then add the herbs.
  • Top with the chicken quarters, then sprinkle with the diced bacon, onion, and carrots.
  • Season to taste, and arrange the remaining potatoes on top, overlapping slightly.
  • Pour in the beer or stout.
  • Brush the potatoes with the melted butter, and cover with a lid.
  • Bake in a preheated oven at 300 degrees for about 2 hours, uncovering for the last 30 minutes to allow the potatoes to brown.
  • Serve hot, with seasonal vegetables.

    *rubs tum contentedly while suppressing a burp* I made it for dinner and we just finished it. Nothing but bones left - cleanest bones you ever did see LOL It was gorgeous, just gorgeous and so easy - I ran outta carrots so I used mushrooms instead. *Burp* Oops, sorry, didn't see that one coming ;) Thanks Chichi! That was the first proper meal I've really enjoyed since getting sick *waddles over to sofa to sink into a blissful "Chicken Hot Pot" induced coma*

    OMG this deserves a 10! I LOVE the sound of this and I've got everything and half a ton of spuds sprouting in their basket lol This is dinner tonight. Got some really good apple cider in the fridge too and that'll be chasing down the chicken lol ;)
