Spaghettini Rustica

- 1/2 oz ladle extra virgin olive oil shopping list
- 1 oz Real bacon bits, cooked shopping list
- 1 tsp garlic, chopped shopping list
- 2 oz red onions, roasted shopping list
- 4 oz chicken stock shopping list
- 1 oz tomatoes, grape, halved shopping list
- 2 oz Reggiano, grated shopping list
- 1 Tbl butter, whole shopping list
- 2 pinches salt and pepper Mix shopping list
- 1/2 oz ladle extra virgin olive oil shopping list
- 7 oz spaghettini shopping list
- 1 Tbsp basil, julienned shopping list
- 1/2 oz arugula shopping list
- 1/2 Tbsp Reggiano, grated shopping list
How to make it
- Cook pasta in water with 1/2 oz olive oil and 2 pinches kosher salt
- While pasta cooks, heat 2nd 1/2 oz oil over medium heat, saute bacon, garlic and red onions for a few minutes.
- Add chicken stock, tomatoes and 2 oz. of reggiano cheese.
- Let cook a few more minutes, till slightly reduced.
- Add butter, and stir in until butter is melted.
- Season with salt & pepper.
- Add in basil and arugula, then stir in cooked spaghetti pasta.
- Plate and sprinkle with additional reggiano, then serve
