Smoked Salmon And Cream Cheese Lefse Roll-up For One Recipe
I like to make a couple of these to tote to work for lunch. If you make enough of them and slice into bite-size pieces, you can use as an appetizer

Ingredients
  • Packaged lefse
  • whipped cream cheese (can use unsalted butter instead if desired)
  • black pepper
  • thin-sliced smoked salmon
  • very thin slices of English cucumber
  • very thinly sliced red onion

Directions
  1. Place one piece of llefse on a cutting board.
  2. Spread desired amount of cream cheese in a thin, even layer over entire surface of lefse.
  3. Lightly sprinkle with pepper
  4. Arrange desired amount of smoked salmon slices on top, leaving a 1-inch border.
  5. Arrange desired amount of cucumber and onion slices evenly over salmon.
  6. Roll lefse as tightly as possible, taking care not to push filling forward as you go.
  7. Cut roll into eight equal pieces and arrange on a plate – or eat it whole.

Years ago my grandmother made and sold lefse on the iron range (in northern Minnesota). Hers was so moist and tender. Where can I get lefse like hers? I will make these for dinner during our brief Minnesota heat wave. Thanks for the recipe. L.
