Baked Apple with Rum-Caramel Sauce

- 4 medium baking apples shopping list
- 2 tbsp water shopping list
- 1 cup vanilla low-fat ice cream shopping list
- 1/4 cup fat-free caramel topping shopping list
- 1 tbsp rum or apple cider shopping list
- dash of cinnamon shopping list
How to make it
- Cut thin slice off bottom and top of each apple. Using paring knife, or apple corer, removed core from each apple.
- In 8-9 inch square microwave dish. Place apple upright. Pour 2 tbsp water over apple. Cover with microwave plastic wrap, folding back on edge to vent steam. Microwave on high 8-10 minutes or until apple are tender. Reserves 1 tbsp cooking liquid. Cut each apple in half.
- Place 2 apple halves, in each indiviual serving bowl. For each serving, spoon 1/4 cup ice cream between apple halves. In small bowl, stir caramel topping, 1 tbsp cooking liquid and the rum, pour over apples. Sprinkle with cinnamon..
