Southern Corn Bread For A Crowd Recipe
Basic moist recipe for large quantity. Easily varied by adding some creamed corn, peppers to recipe.etc

Ingredients
  • 2 quarts flour
  • 1/2 c. sugar
  • 3/4 c. baking powder
  • 4 TBS salt
  • 3 1/2 c. cornmeal
  • 6 eggs, beaten
  • 1 1/2 TBS baking soda
  • 1 1/2 quarts buttermilk
  • 1 c. melted shortening ( butter or margarine etc. )

Directions
  1. Mix and sift flour, sugar, baking powder and salt.
  2. Stir in cornmeal and mix well.
  3. Add eggs.
  4. Add baking soda, dissolved in buttermilk, and shortening.
  5. Mix well to blend.
  6. Bake in greased shallow pans in quick oven (425 F) 35 minutes
  7. or until tested done.
