How to make it

  • Preheat oven to 425 degrees.
  • In a medium bowl, stir together the horseradish, mustard, and pepper.
  • Lightly spray a broiler pan with vegetable oil spray.
  • Put pork on the broiler pan.
  • Coat the top and sides of the pork with the horseradish mixture.
  • In the same bowl, stir together the spinach, green onions, blue cheese, oregano, and garlic.
  • Cut a thin slice from the top of each tomato.
  • Scoop out the pulp, being sure not to pierce the bottom.
  • Spoon the spinach mixture into each tomato.
  • Cover each with aluminum foil to keep the top from drying out.
  • Place the tomatoes on the broler pan with the pork.
  • Bake for 25 minutes, or until the pork is just barely pink in the center.
  • When pork is done, sprinkle with the parsley, if desired.
  • Let stand 5 minutes.
  • Slice the pork on the diagonal.
  • Serve tomatoes on the side.
  • Great with couscous or white rice.
