Horseradish Pork With Blue Cheese Tomatoes

- 1 1/2 Tbs. prepared horseradish shopping list
- 1 1/2 Tbs. Dijon mustard shopping list
- 1/2 tsp. pepper shopping list
- vegetable oil Spray shopping list
- 1 pound pork tenderloin, all visible fat discarded shopping list
- 10-ounce package frozen chopped spinach, thawed, well drained, and squeezed dry shopping list
- 1/4 cup finely chopped green onions (green and white parts) shopping list
- 2 ounces blue cheese, crumbled shopping list
- 2 tsp. dried oregano, crumbled shopping list
- 1 medium garlic clove, minced shopping list
- 4 medium tomatoes shopping list
- 1/4 cup snipped fresh parsely for garnish (if desired) shopping list
How to make it
- Preheat oven to 425 degrees.
- In a medium bowl, stir together the horseradish, mustard, and pepper.
- Lightly spray a broiler pan with vegetable oil spray.
- Put pork on the broiler pan.
- Coat the top and sides of the pork with the horseradish mixture.
- In the same bowl, stir together the spinach, green onions, blue cheese, oregano, and garlic.
- Cut a thin slice from the top of each tomato.
- Scoop out the pulp, being sure not to pierce the bottom.
- Spoon the spinach mixture into each tomato.
- Cover each with aluminum foil to keep the top from drying out.
- Place the tomatoes on the broler pan with the pork.
- Bake for 25 minutes, or until the pork is just barely pink in the center.
- When pork is done, sprinkle with the parsley, if desired.
- Let stand 5 minutes.
- Slice the pork on the diagonal.
- Serve tomatoes on the side.
- Great with couscous or white rice.
