Ingredients
  • BEEF
  • 2 tbsp canola oil
  • 2 beef tenderions 3/4 lb each
  • 1 tsp. black pepper
  • 1/2 tsp. ground red pepper
  • 1/2 tsp of salt
  • PINEAPPLE SALSA
  • 1 can pineapple tidbits, drained
  • 4 medium spring onion, sliced
  • 1/4 cup bell pepper, chopped
  • 2 tbsp. cinlantro leaves, chopped
  • 1/2 tsp. greated lime peel
  • 2 tsp. lime juice
  • 1/4 tsp salt

Directions
  1. Heat grill. Rub tsp of oil into each beef tenderoin, sprinkly with pepper and salt.
  2. Carefully brushed grill rack with oil. Place beef on grill over medium heat. Cover grill, cook for 20-30 minutes. Turning occationally, until beef has slightly blush of pink in the center.
  3. Meanwhile in medium bowl, mix salsa ingredients. Cut beef into 1/2 inch slices. Serve with salsa.
  4. Serve with side of vegetables and mash potatoe.
