Roasted Yellow Bell Pepper and Tomato Soup

- 6 yellow bell peppers roasted and chopped coarsely shopping list
- 3 tablespoons shallots shopping list
- 1 teaspoon thyme shopping list
- 1 tablespoon unsalted butter shopping list
- 1-1/2 cups chicken broth shopping list
- 1/2 cup heavy cream shopping list
How to make it
- In heavy saucepan melt butter and sauté shallots with the thyme until soft.
- Add chopped pepper and chicken broth.
- Simmer covered for 12 minutes until peppers are very soft then puree in food processor.
- Pour back in saucepan and whisk in cream.
- Add chicken broth to get desired consistency.
- Serve immediately.
