Herb Baked Eggs

- 4 thin round slices of honey baked ham shopping list
- 6 large eggs shopping list
- 2 teas. Dijon mustard shopping list
- 1/2 cup plain lowfat yogurt shopping list
- 1 1/2 cups shredded sharp cheddar cheese shopping list
- 4 teas. fresh chopped chives shopping list
- 4 teas. fresh chopped parsley shopping list
How to make it
- Preheat oven to 375 degrees.
- Grease 4 ramekins with olive oil spray.
- Line greased ramekins with ham slices.
- In a medium bowl, beat eggs, mustard and yogurt.
- Stir half of cheese into mixture.
- In a small bowl, mix chives and parsley and add half of mixture to the eggs.
- Stir well, then spoon into the ramekins over ham.
- Sprinkle with remaining cheese and herbs.
- Bake for 25 - 30 minutes or until golden.
- Turn out onto serving plates.
