Grandmas Eggplant Parmesan

- 2 large firm eggplants,peeled and sliced in circles shopping list
- 3 eggs shopping list
- 1 cup cold water shopping list
- about 2 cups flour shopping list
- chopped or dried parsley (about 1/2 cup) shopping list
- salt and pepper shopping list
- about 2 cups oil for frying shopping list
How to make it
- In a large bowl, beat eggs with 1 cup of cold water, salt and pepper(little of each) and parsley(about 1/4 cup)
- My Grandma used to use a dish for this next step, but I now use a large freezer zip lock bag to simplify and add 2 cups flour, a little salt and pepper,and parsley (about 1/4 cup )
- Add eggplant slices (as many as could fit but dont overcrowd!) to the zip lock bag and shake well to coat the slices with the flour mixture.Dont forget to zip the bag tight before you shake!! :o)
- Heat oil in a large skillet until very hot- to test if ready, drop a few drops of water into the oil-if they sizzle, the oil is ready!)
- Dip slices, one at a time in the egg mixture and repeat with other slices.
- Fry slices a few at a time until golden and crispy,turn slices over every so often to be sure other side is golden and crispy also, Poke a few holes in the eggplant slices with a fork as you are frying(not too many!)
- Drain on paper towels.
- Serve with sauce and cheese or layer with sauce ,parmesan and romano cheeses and shredded mozzarella cheese and bake at 350 degrees for 30 minutes.(Eggplant Parmesan)
