I created this dish for my dear friend Peter's birthday dinner. It turned out so very well that I needed to share it with everyone!

Ingredients
  • 1 lb. mild italian sausage
  • 1 medium onion diced
  • 4 cloves of garlic, minced
  • 1/4 cup diced green pepper
  • 1/4 cup diced red pepper
  • 1 can whole tomatoes, crushed
  • 1 small can mushrooms
  • 1 jar spaghetti sauce of choice (I used super chunky mushroom)
  • 1/4 tsp. dried basil
  • 1/4 tsp. italian seasoning
  • 1/4 tsp. red pepper flakes (to taste)
  • 1 lb penne pasta
  • 15 oz ricotta
  • 1 cup shredded parmesan cheese
  • 1/2 cup fresh parsley, minced
  • 1 cup mozzarella cheese, shredded

Directions
  1. Preheat oven to 350 degrees F
  2. Brown sausage
  3. While browning, add onion, garlic and pepper until softend.
  4. Add one can of whole tomatoes and crush the tomatoes.
  5. Continue cooking.
  6. Add spaghetti sauce and seasonings and mushrooms.
  7. Stir well.
  8. Continue simmering while pasta is cooked.
  9. Do not over cook the pasta. Undercooking just a little is preferred.
  10. While draining the pasta, put the ricotta and parmesan and parsley in the pot in which you cooked the pasta. (reserve a bit of parsley for garnish)
  11. Stir well to coat the pasta.
  12. Pour 1/2 of the sauce into a 9x13" baking dish. (I use a baking stone)
  13. Put the pasta/cheese mixture in next.
  14. Cover with remaining sauce.
  15. Sprinkle with 1 cup of shredded mozzarella cheese
  16. Bake for 25 - 35 minutes, until bubbly.
  17. Let sit for 10 mintues and serve with italian bread and salad.
