I created this recipe for my dear friend Peter's birthday dinner. It turned out so well I had to share it with everyone!

Ingredients
  • 1 lb mild italian sausage
  • 1 medium onion
  • 4 cloves garlic, minced
  • 1/4 cup green pepper, diced
  • 1/4 cup red pepper, diced
  • 1 can whole tomatoes
  • 1 jar spaghetti sauce of choice (I use super chunky mushroom)
  • 1 small can mushrooms
  • 1/4 tsp. dried basil
  • 1/4 tsp. italian seasoning
  • 1/4 tsp. red pepper flakes
  • 1 lb penne pasta
  • 15 oz. ricotta cheese
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup chopped fresh parsley
  • 1 cup mozzarella cheese

Directions
  1. Preheat oven to 350 degrees F
  2. Brown sausage.
  3. While browning sausage, add onion, peppers and garlic.
  4. Saute until softened.
  5. Add can of tomatoes and crush.
  6. Stir in spaghetti sauce, mushrooms and seasoning.
  7. Simmer on low while pasta is cooking.
  8. Cook pasta until al dente. (try not to overcook the pasta as it will continue to cook in the oven)
  9. Drain the pasta.
  10. Put the ricotta & parmesan cheeses into the pot in which you cooked the pasta.
  11. Pour the pasta back into the pot and stir to coat the pasta.
  12. Add the parsley and mix thoroughly.
  13. In a 9 x 13" pan, pour 1/2 the sauce.
  14. Put the pasta in next.
  15. Cover with the remaining sauce.
  16. Sprinkle with the mozzarella cheese.
  17. Bake for 25 - 35 minutes until bubbly.
  18. Remove from oven and let sit for 10 minutes before serving.
