Ingredients

1 frying chicken, cut in pieces

4 cloves garlic, crushed

1 to 2 tsp. rosemary

salt and pepper to taste

1/2 cup vinegar

shortening

I add a bay leaf and dashes of white wine

Directions

Brown chicken in a small amount of shortening. Add garlic, rosemary, salt, pepper and vinegar. Cover and simmer for about 30 to 40 minutes. If chicken becomes too dry, add a little water. Uncover and cook 30 minutes or until chicken is tender and most of the liquid has cooked out.

This is similar to Adobo, but doesn't have onion or soy sauce. More of a traditional Sunday lunch.
