Raspberry Foole

- 1 pound raspberries shopping list
- 1/4 plus 1/2 cup sugar shopping list
- 1 1/2 teaspoons vanilla shopping list
- 1 1/2 cups heavy cream shopping list
How to make it
- Mash berries (or put in the blender) and press through a fine sieve to remove the seeds. Stir in 1/4 cup of the sugar and set aside.
- Mix together the remaining sugar, vanilla and cream. Whip until firm, do not make whipped cream out of this, just to a soft peak.
- Take most of the cream and gently fold in the fruit (save enough cream to be whipped fully for the topping)
- Use a large bag to pipe the mixture into glasses,sprinkle fresh raspberries, drizzle a little of the juice from the mixing, sprinkle chocolate crumbs (as shown) or just leave it alone, your call.
- Finish whipping the remaining cream to a nice firm whipped cream, and pipe it on top of the Foole.
- Let this stand in the fridge for about 3 or 4 hours before serving.
- Be prepared to make this regularly ;-)
