Ingredients
  • 1 1/2 cups all purpose flour
  • 1 cup plus 1 tablespoon sugar-divided
  • 3 teaspoons baking powder
  • 3 teaspoon grated orange peel
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs-lightly beaten
  • 1 cup cold mashed sweet potatoes
  • 1/4 teaspoon ground cinnamon
  • Ginger Butter:
  • 1/2 cup butter-softened
  • 2 tablespoon finely chopped crystallized ginger

Directions
  1. In a large bowl, combine flour,1 cup sugar,baking powder,orange peel,ginger,baking soda,and salt.
  2. Combine eggs and sweet potatoes and stir into dry ingredients until just moistened.
  3. Fill greased or paper-lined muffin tins two-thirds full.
  4. Combine cinnamon and remaining sugar. Sprinke over batter.
  5. Bake at 400 degrees for 18-20 minutes or until inserted toothpick comes out clean.
  6. Ginger Butter:
  7. In a small bowl,combine ginger and butter. Mix well.
  8. Serve with warm muffins.
