This Dish is simple to make but nothing "simple" about the taste. Pairs well with Garlic Bread and Salad.

Ingredients
  • 3 Cups Penne Pasta, uncooked
  • 2-3 tbs. Zesty Italian Dressing
  • 1 1/2 lb. Chicken Breast ( boneless, skinless) cut in chunks
  • 2 Zucchini cut in chunks
  • 1 1/2 Cup cut up fresh Asparagus
  • 1 red pepper chopped
  • 1 Cup Chicken Broth
  • 4 oz. Neufchatel Cheese, cubed
  • 1/4 C Grated Parm

Directions
  1. Boil Water and Cook Pasta
  2. Heat Dressing in Large Skillet on Medium
  3. Add Chicken and Vegetables. Cook 12 Mins, stirirng occassionally
  4. Add Cream Cheese and Broth, cook 1 minute or until cheese is melted. Add Parmesan Cheese.
  5. Drain Pasta, return to Pot
  6. Add Chicken and Vegetables, toss
  7. lightly cook 1 minute
  8. ** I used Broccoli instead of Zucchini, extra Neufchatel Cheese and Parmesan Cheese! :)
