Soft Gingerbread Recipe
This is an old recipe my mom found in a letter written before the turn of the century

Ingredients
  • 1 cup molasses
  • 1 cup cream
  • 2 even teaspoons of baking soda
  • 1 Tablespoon of ginger
  • Pinch of salt
  • 1 egg - beaten
  • 2 heaping cups of sifted flour

Directions
  1. Mix the cream and molasses together
  2. The add the other other ingredients
  3. Beat lightly but not too much
  4. Pour into lightly greased 9 X 13 pan and cook for about 1 hour at 350 degrees. Check often when baking as oven tempatures may vary.
  5. It is finished when a toothpick comes out clean.

I love gingerbread too. My step mom used to cut us big squares, top it with butterscotch sauce and whip cream while it was still warm and the cream would melt into a lovely puddle. YUMMMMMMM!
