Shrimp And Corn Bisque Recipe
Served with a salad and homemade bread this make a great meal. My family loves it even the ones who think corn should be served by itself!

Ingredients
  • Shrimp and Corn Bisque
  • 1 stick butter
  • 1 med. onion chopped
  • 2 lbs raw shrimp peeled and in bite sizes (I cut them in thirds) can use frozen
  • 1 can whole kernel corn with juice
  • 1 can tomato soup
  • 1 can cheddar cheese soup
  • 1 can cream of mushroom soup (used 98%fat free)
  • 3 cups half and half
  • 2 Tbsp white balsamic vinegar
  • 2 Tbsp chopped fresh parsley
  • 2 cloves garlic(I use only 1)
  • 11/2 Tsp Tony"s Creole seasoning(might want a tad more)
  • Salt and pepper to taste
  • 3 Tbsp cooking sherry(optional-did not use)

Directions
  1. Melt butter and saute onions until clear. Add shrimp and stir in until pink
  2. Add the remaining ingredients, stir well, bring to a boil and simmer for 30 mins.
  3. Stir frequently to keep heavy ingredients from sticking to the bottom.

I would use Taylors Sherry. It's about $6.00 at your liquor store. I don't like cooking sherry, but the real thing is great. Just like this soup will be. L.
