Balsamic Potato Salad Recipe
BALSAMIC POTATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hartford Estate in Mesquite Texas in 1991.

Ingredients
  • 3 pounds new red potatoes
  • 1/2 cup oil packed sun dried tomatoes slivered
  • 3 tablespoons capers
  • 1/2 cup balsamic or white wine vinegar
  • 1/4 cup olive oil
  • 2 tablespoons sun dried tomato oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons chopped fresh oregano or basil

Directions
  1. In pot of boiling salted water cook potatoes 20 minutes or until tender.
  2. Drain and let cool then cut in half and place in bowl.
  3. Add tomatoes and capers.
  4. Whisk together vinegar, olive oil, sun-dried tomato oil, mustard, salt and pepper.
  5. Toss with potato mixture then allow to stand 5 minutes and sprinkle with oregano.
