Shrimp Burgers Recipe
A different take on burgers! It looks weird when you are making it, but do not be discouraged, they come out beautiful!

Ingredients
  • 1 1/2 pounds large shrimp, peeled
  • 2 Tbsp chopped garlic (or less, but that is my preference)
  • 2 tablespoons minced fresh ginger - I like the stuff that comes in the tube in the produce section
  • 1 jalapeno pepper, seeded and minced
  • 1/2 cup green onions chopped
  • 1/4 - 1/2 cup Thai peanut sauce
  • 1/4 cup dry whole wheat bread crumbs - you may need to add a little more

Directions
  1. Put shrimp in the food proccessor - if you do it in batches, it is easy. Pulse until you have a paste (yes, it looks weird!)
  2. Add the rest of the ingredients, playing w/ the peanut sauce and bread crumbs to make patties.
  3. Put these in the fridge for 20 minutes or longer - this will help them stay together on the grill.
  4. Fire up your grill.
  5. Spray the grill and cook for 3 1/2 to 4 minutes on each side or until done
  6. Serve this on a bun w/ some spicy slaw or eat this alone w/ a little extra peanut sauce.
