Shrimp Burgers Recipe

Ingredients

1 1/2 pounds large shrimp, peeled

2 Tbsp chopped garlic (or less, but that is my preference)

2 tablespoons minced fresh ginger - I like the stuff that comes in the tube in the produce section

1 jalapeno pepper, seeded and minced

1/2 cup green onions chopped

1/4 - 1/2 cup Thai peanut sauce

1/4 cup dry whole wheat bread crumbs - you may need to add a little more

Directions

Put shrimp in the food proccessor - if you do it in batches, it is easy. Pulse until you have a paste (yes, it looks weird!)

Add the rest of the ingredients, playing w/ the peanut sauce and bread crumbs to make patties.

Put these in the fridge for 20 minutes or longer - this will help them stay together on the grill.

Fire up your grill.

Spray the grill and cook for 3 1/2 to 4 minutes on each side or until done

Serve this on a bun w/ some spicy slaw or eat this alone w/ a little extra peanut sauce.

I did about 3/4 of my shrimp to a paste, and then chopped the other quarter into little chunks and folded in it. They held together perfectly on the grill and I got a nice bite of shrimp every now and then. Great recipe!
