Pirate Stuffed Potatoes

- Leftover fish or meat, about a pound or less works (I've used salmon) shopping list
- 6 good-sized baking potatoes, about 7 oz each shopping list
- 2 cups shredded cheddar or other cheese shopping list
- 1/2 cup milk shopping list
- 2 eggs shopping list
- 4 T margarine shopping list
- chopped parsley, if desired shopping list
- 4 T minced onions (green, white or red) shopping list
- 1/4 tsp black pepper and salt, only if needed shopping list
How to make it
- If using fish, flake it and set aside. If using chicken or other meat, flake, slice or chop and set aside
- Pierce potato skins a few times with a fork and place in the microwave on a paper towel and cover with some plastic wrap
- Cook until tender, about 18-22 minutes, depending on size of potatoes
- When tender, cut a slice off the top of each potato and scoop out the inside, leaving 1/4 " thick shell
- Blend the potato pulp with 1/2 cup of the cheese, fish or meat and remaining ingredients
- Spoon mixture into potato shells and place on microwave-safe plate
- Microwave on high power for 4 minutes
- Sprinkle with remaining cheese and microwave 45 seconds, or until cheese is melted
- Garnish with chopped parsley
- Serve and enjoy!!
