Ingredients

How to make it

  • If using fish, flake it and set aside. If using chicken or other meat, flake, slice or chop and set aside
  • Pierce potato skins a few times with a fork and place in the microwave on a paper towel and cover with some plastic wrap
  • Cook until tender, about 18-22 minutes, depending on size of potatoes
  • When tender, cut a slice off the top of each potato and scoop out the inside, leaving 1/4 " thick shell
  • Blend the potato pulp with 1/2 cup of the cheese, fish or meat and remaining ingredients
  • Spoon mixture into potato shells and place on microwave-safe plate
  • Microwave on high power for 4 minutes
  • Sprinkle with remaining cheese and microwave 45 seconds, or until cheese is melted
  • Garnish with chopped parsley
  • Serve and enjoy!!
