Ingredients
  • 1 cup oil
  • 1/4 cup half and half or milk - even try skim - it will be a tad less rich!
  • 2 cups sugar
  • 4 eggs
  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp pure vanilla or almond extract etc.
  • 3 small apples peeled and coarse chopped
  • 1/4 cup dark raisins
  • 1/4 cup chocolate chips
  • 1/3 cup chopped walnuts, almonds or pecans
  • 1/4 cup flaked coconut
  • 1/4 cup drained and chopped maraschino cherries
  • powdered sugar mixed with cocoa as garnish

Directions
  1. Grease and flour a large fluted cake pan.
  2. Preheat oven to 325F.
  3. Beat oil, milk, extract and sugar till well combined.
  4. Beat in eggs to combine.
  5. Sift dry ingredients together and beat into to wet mixture and combine well.
  6. Stir in fruits and nuts.
  7. Turn batter into pan and bake until tested done with wooden toothpick- about 60 to 75 minutes.
  8. Cool in pan 15 minutes and remove to rack to cool well.
  9. Wrap overnight before slicing for best flavor.
  10. Dust with sugar/cocoa.
  11. 1 large moist cake. Freezes well.
