How to make it

  • Heat oil in a large skillet over moderate heat and sauté onion, garlic and bell pepper 5 minutes.
  • Add parsley and broth then season with salt and pepper.
  • Bring to a boil and remove from heat.
  • Layer sliced potatoes in broth in the skillet then bring to a boil over moderate heat.
  • Reduce heat and simmer covered for 20 minutes.
  • Pour a little of the cooking liquid over the potatoes when serving.
