Basque Potatoes

- 2 tablespoons olive oil shopping list
- 1 medium white onion chopped shopping list
- 2 cloves garlic crushed shopping list
- 1 bell pepper seeded and chopped shopping list
- 1/2 cup chopped parsley shopping list
- 1 cup chicken stock shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 6 medium potatoes thinly sliced shopping list
How to make it
- Heat oil in a large skillet over moderate heat and sauté onion, garlic and bell pepper 5 minutes.
- Add parsley and broth then season with salt and pepper.
- Bring to a boil and remove from heat.
- Layer sliced potatoes in broth in the skillet then bring to a boil over moderate heat.
- Reduce heat and simmer covered for 20 minutes.
- Pour a little of the cooking liquid over the potatoes when serving.
