Pork Pot Roast

- 4-5lb pork butt or Blade roast shopping list
- 1 ½ Cups baby carrots shopping list
- 8 Medium potatoes pealed and quartered shopping list
- 1 Large onion chopped shopping list
- 1 Large bell pepper sliced (I use red yellow or orange green gives the dish a sickly color) shopping list
- 4 Cups hot water shopping list
- 2 T spoons olive oil or bacon fat shopping list

- 2 T spoons drippings shopping list
- 2 Cups hot water shopping list
- 1 ½ T corn Starch shopping list
- ½ Cup cold water shopping list
- 1 t spoon dry thyme shopping list
- 1 t spoon seasoned pepper shopping list
- 1 t spoon salt shopping list
- 1/8 -1/4 t spoon rubbed sage shopping list
How to make it
- Prepare vegetables and set aside
- Trim excess fat from meat
- Brown meat on all sides in olive oil or bacon fat in a large skillet
- Remove and put meat in Crock pot or roaster
- Drain fat from skillet and reserve
- Add 4 Cups of hot water to cover the meat (It will cover the meat in a crock pot but not in a roaster
- Add potatoes, carrots, onion, and bell pepper
- Gravy
- Use the skillet that you just browned the meat in.
- Add drippings
- Hot water
- Thyme (I use dry thyme and further crush it between my hands to break it up even finer)
- Salt
- Pepper
- Rubbed sage (I find a little goes a long way)
- Heat to a soft boil
- Mix corn starch with cold water until smooth
- Add corn starch to dripping mixture and stir until thickened
- Remove from heat and add to the pot roast (If you are using a crock pot add gravy to cover the meat and vegetables. If you are using a roaster add all the gravy)
- Mix the gravy and water that you already had in with the meat and vegetables
- Crock pot cook on low for 10-12 hours
- Roaster cook at 350 degrees for 2 ½ hours

Now this is what I call down home comfort food. I have done beef roast almost like this but never did the pork, and we all know it is the other white meat. You have my 5 forks..........
