I have fixed a lot of beef pot roasts but never a pork pot roast and since pork is generally less expensive then beef, this makes this dish very affordable. Also I enjoy a good pot roast, I hope you enjoy.

Ingredients
  • 4-5lb Pork Butt or Blade Roast
  • 1 ½ Cups baby carrots
  • 8 Medium Potatoes pealed and quartered
  • 1 Large Onion chopped
  • 1 Large Bell Pepper sliced (I use red yellow or orange green gives the dish a sickly color)
  • 4 Cups hot water
  • 2 T spoons olive oil or bacon fat
  • Gravy
  • 2 T spoons drippings
  • 2 Cups hot water
  • 1 ½ T corn Starch
  • ½ Cup cold water
  • 1 t spoon dry thyme
  • 1 t spoon seasoned pepper
  • 1 t spoon salt
  • 1/8 -1/4 t spoon rubbed sage

Directions
  1. Prepare vegetables and set aside
  2. Trim excess fat from meat
  3. Brown meat on all sides in olive oil or bacon fat in a large skillet
  4. Remove and put meat in Crock pot or roaster
  5. Drain fat from skillet and reserve
  6. Add 4 Cups of hot water to cover the meat (It will cover the meat in a crock pot but not in a roaster
  7. Add potatoes, carrots, onion, and bell pepper
  8. Gravy
  9. Use the skillet that you just browned the meat in.
  10. Add drippings
  11. Hot water
  12. Thyme (I use dry thyme and further crush it between my hands to break it up even finer)
  13. Salt
  14. Pepper
  15. Rubbed sage (I find a little goes a long way)
  16. Heat to a soft boil
  17. Mix corn starch with cold water until smooth
  18. Add corn starch to dripping mixture and stir until thickened
  19. Remove from heat and add to the pot roast (If you are using a crock pot add gravy to cover the meat and vegetables. If you are using a roaster add all the gravy)
  20. Mix the gravy and water that you already had in with the meat and vegetables
  21. Crock pot cook on low for 10-12 hours
  22. Roaster cook at 350 degrees for 2 ½ hours

I do one about once a month, a little different from yours. Sounds delicious!


Now this is what I call down home comfort food. I have done beef roast almost like this but never did the pork, and we all know it is the other white meat. You have my 5 forks..........

Alterations


I serve this with a Middle Eastern flat bread and or rice
Options; replace ¼ cup of water with white wine when making the gravy
