this mousse can be served as is or used in a variety of pies, eclairs or as a filling for a cake.. this recipe is from Biscuits, Spoonbread, and Sweet Potato Pie

Ingredients
  • 1/4 cup boiling water
  • 1 TBSP. dark roasted, ground coffee
  • 4 ounces unsweetened chocolate
  • 1/4 teasp. salt
  • 1/3 cup plus 1 cup heavy cream
  • 2 TBSP. butter
  • 8 - 10 TBSP. sugar.( depends on how sweet you want it)
  • 1 teasp. vanilla
  • 1 TBSP. bourbon
  • 1 TBSP. dark rum

Directions
  1. Pour the boiling water over the ground coffee.
  2. let steep for a minute or two....strain
  3. in a double boiler put the chocolate, salt, 1/3 cup of cream and the butter and the coffee flavored water
  4. melt the chocolate and stir until smooth... let cool to lukewarm
  5. whip the 1 cup of cream, adding the sugar slowly , until stiff peaks form
  6. fold the flavorings into the whipped cream
  7. fold the whipped cream into the melted chocolate
  8. makes about 5 cups
