How to make it

  • In a small bowl,combine the lemon juice and cornstarch,then set aside. In a medium saucepan,combine the blueberries,sugar,water and salt. Bring mixture to a boil over high heat. Reduce to a simmer and stir in lemon juice-cornstarch mixture. simmer,stirring until the sauce thickens slightly,about 2 mins more.

    This was not only easy peasy to make, but delicious! At first, I thought the small amounts of water and juice wouldn't be nearly enough for the amount of berries, but they turned out to be spot on. Likewise, I was afraid the sugar might make the sauce way too sweet for our taste and was tempted to reduce the amount, but, in the end, I went with the recipe and the finished sauce was not overly sweet at all. I didn't have a lemon on hand, so subbed orange juice, but that and using the smaller wild Maine blueberries I prefer are the only deviations from the recipe. I stored the sauce in the refrigerator and took it out a few hours before serving to come to room temperature. It thickened up quite a bit in the refrigerator and I thought I would have to thin it with a small amount of water, something I really didn't want to do for fear of diluting the flavor. After letting it sit and then giving it a gentle shake, it poured easily over our oven pancake. This recipe is going into my tried and true file!     Very simple and delicious! I didn't have any lemons so I used a little lime juice and a little orange juice. Perfect! I put this sauce on a blueberry cheesecake...worked great! Thanks!
