Spinach Pork Rolls Recipe

Ingredients

1 tablespoon canola oil

1/2 cup chopped small onion

1/4 cup finely chopped mushrooms

10 ounces frozen spinach thawed and squeezed of excess water

1/2 teaspoon salt

1 teaspoon freshly ground black pepper

1 tablespoon grated parmesan cheese

1 tablespoon cream cheese

2 tablespoons dried bread crumbs

3 closely trimmed lean boneless pork loin chops

Shaved Parmesan cheese

Olive oil cooking spray

1 teaspoon dried rosemary leaves crumbled slightly

Directions

Heat oil over medium heat then sauté onion and mushroom until onion soften about 2 minutes.

Stir in spinach and season with salt and pepper.

Add grated parmesan and cream cheese and blend then mix in breadcrumbs.

Pound pork chops until doubled in size then season with salt and pepper.

Place 1” wide strip of shaved Parmesan across each loin.

Divide stuffing between chops and spread over cheese strips.

Roll up chops then place seam side down in glass baking dish that has been sprayed with oil.

Top with ground pepper and rosemary then spray again with olive oil.

Bake uncovered at 350 for 30 minutes.

I made this tonite. Soooooo delicious. I made two substitutions ... instead of crumbs I used 1/4 cup of oats ... at the frying of onions and mushrooms I added 4 cloves of chopped garlic.

Excellent recipe!
