Spinach Pork Rolls

- 1 tablespoon canola oil shopping list
- 1/2 cup chopped small onion shopping list
- 1/4 cup finely chopped mushrooms shopping list
- 10 ounces frozen spinach thawed and squeezed of excess water shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 tablespoon grated parmesan cheese shopping list
- 1 tablespoon cream cheese shopping list
- 2 tablespoons dried bread crumbs shopping list
- 3 closely trimmed lean boneless pork loin chops shopping list
- Shaved parmesan cheese shopping list
- olive oil cooking spray shopping list
- 1 teaspoon dried rosemary leaves crumbled slightly shopping list
How to make it
- Heat oil over medium heat then sauté onion and mushroom until onion soften about 2 minutes.
- Stir in spinach and season with salt and pepper.
- Add grated parmesan and cream cheese and blend then mix in breadcrumbs.
- Pound pork chops until doubled in size then season with salt and pepper.
- Place 1” wide strip of shaved Parmesan across each loin.
- Divide stuffing between chops and spread over cheese strips.
- Roll up chops then place seam side down in glass baking dish that has been sprayed with oil.
- Top with ground pepper and rosemary then spray again with olive oil.
- Bake uncovered at 350 for 30 minutes.
