Ingredients

How to make it

  • Heat oil over medium heat then sauté onion and mushroom until onion soften about 2 minutes.
  • Stir in spinach and season with salt and pepper.
  • Add grated parmesan and cream cheese and blend then mix in breadcrumbs.
  • Pound pork chops until doubled in size then season with salt and pepper.
  • Place 1” wide strip of shaved Parmesan across each loin.
  • Divide stuffing between chops and spread over cheese strips.
  • Roll up chops then place seam side down in glass baking dish that has been sprayed with oil.
  • Top with ground pepper and rosemary then spray again with olive oil.
  • Bake uncovered at 350 for 30 minutes.

    I made this tonight, yum! And so attractive. I made few substitutions. I used a slice of Swiss instead of Parmesan, and a wedge of skinny Laughing Cow instead of cream cheese. This recipe is easily reduced to feed two. Oh! And no added salt for old people diets, with no detectible loss of flavour.

    I made this tonite. Soooooo delicious. I made two substitutions ... instead of crumbs I used 1/4 cup of oats ... at the frying of onions and mushrooms I added 4 cloves of chopped garlic.

    Excellent recipe!
