Vegetable Pizza Recipe
I got this recipe from HEB's paper. I would definately make this one "my own", adding roasted garlic and whatever else you like on pizza! I would use low-fat stuff as well and/or use less cheese and more veggies.

Ingredients
  • 1 can refridgerated dinner rolls
  • 1 cup marinara sauce
  • 1 (8 oz.) pkg shredded Italian blend cheese
  • 1 cup thin sliced grilled zucchini, eggplant, & peppers (HEB sells this in the freezer section, but I think I would use fresh)
  • 1 cup sliced mushrooms (again, I would use fresh - but if not, make sure they are well drained)

Directions
  1. Heat oven to 450F.
  2. If you have a baking stone, use it. If not line a baking sheet w/ foil.
  3. Arrange rolls in the shape of a 10" pizza.
  4. Top w/ marinara and 1/2 cup of cheese.
  5. Top w/ veggies.
  6. Top w/ remaning cheese
  7. Bake for 15 minutes and let cool for 5 minutes.
