Ministrone Sicilian Style

- 1 /4 c olive oil shopping list
- 8 celery stalks, diced shopping list
- 3 carrots,diced shopping list
- 1 large onion,diced shopping list
- 3 medium potatoes, sliced shopping list
- 1- 28 oz can Italian peeled tomatoes,chopped,with juice shopping list
- 8 c chicken stock shopping list
- 1 c frozen peas shopping list
- 1 /4 lb spaghetti, broken small shopping list
- 2 T fresh basil,chopped shopping list
- parmesan cheese shopping list
- salt and pepper shopping list
How to make it
- Heat olive oil in skillet.
- Add celery, carrots and onion.
- Cook about 5 minutes, stirring occasionally.
- Add potatoes, tomatoes with juice,and chicken stock.
- Season with salt and pepper to taste.
- Cook for 15 minutes.
- Add peas and spaghetti broken in small pieces.
- Cook 7-8 minutes,or until spaghetti are tender.
- Add basil and serve with Parmesan cheese on top.
