I have never baked using soy dairy before, is there anything different about using it in place of regular dairy? I have a friend who can only use soy now and I'd like to try to make these for him but was wondering how they might be different when using regular dairy.

I've subbed soy milk for cow milk when cooking before - brownies, muffins, waffles. surprisingly it isn't at all noticeable, so i'm guessing you'll be fine. i think the milk is really in there more for moisture than taste...

Once again you did it¡¡ love this muffins. I have recently switched from cow milk to soy OR oats milk and I can´t taste the difference. Since I wanted to cut down even more my carbs intake, I have also switched from honey to agave syrup, delicious and with a low GI. I shall use this recipe for my next batch of muffins. Thanks.
