Gator Chicken Sauce Piquante Recipe
I am from Louisiana but do use the other white meat for the alligator in this recipe! This is from my brother-in-law and is great.

Ingredients
  • 1/4 cup oil
  • 1/4 cup flour
  • 1 small can tomato paste
  • 1 cup diced onion
  • 1/4 cup diced bell pepper
  • 1/2 cup green onion tops
  • 3 cups water
  • juice of half of a lemon
  • 6-8 chicken breast or 3 lbs alligator meat
  • 2 T salt
  • 1 T red pepper

Directions
  1. In heavy sauce pan make roux with flour and oil; golden brown. Add onion, tomato paste and bell pepper until onion has wilted. Slowly whisk in water until there are no lump ans simmer 45 minutes. Season your meat with salt, pepper and lemon juice add to saucepan along with green onion tops. Cook about an hour until meat is tender and serve over hot rice.

Whatcha got against alligator meat?


I have a southern friend who just may never leave my kitchen when I cook this one. And I know where to get alligator meat up here. :-)


This sounds incredible and so glad its not fried nothing aginst fried but ready for a diffrent way this sounds great and i can also use chicken if my guest dont want to try. great post thanks...love gator


Sounds real good. I love gator. only had it made 1 way. fried. so good. My husband got it at a resturant and I copied it after I found where to get them here in Michigan
