Pan Seared Tilapia With Lemon Mustard Sauce

- 1 Tablespoon olive oil shopping list
- 1 1/2 pounds tilapia fillets shopping list
- 1 teaspoon seasoned salt shopping list
- juice of 2 large lemons(about 1/2 cup) shopping list
- 1/4 cup low-sodium chicken stock shopping list
- 1 Tablespoon Dijon mustard shopping list
- 1 Tablespoon chopped fresh tarragon(or 1 teaspoon dried) shopping list
- Large non-stick skillet shopping list
How to make it
- In the large, nonstick skillet, heat oil over medium heat.
- Sprinkle fish with seasoned salt and place in hot pan
- Cook 2 minutes on first side until golden brown.
- Use a wide spatula to turn the fish carefully; cook until second side is golden brown.
- Remove fish to serving platter.
- Add lemon juice and chicken stock to pan and use a wooden spoon to scrape up any bits of fish from the pan.
- Whisk in mustard and simmer for about 1 minute.
- Stir in tarragon.
- Pour sauce over fish
- Enjoy!

I love Tilapia also and this recipe is fantastic! I have never had it with chicken stock so that makes it interesting to me.
