Pan Seared Tilapia With Lemon Mustard Sauce Recipe

Ingredients

1 Tablespoon olive oil

1 1/2 pounds tilapia fillets

1 teaspoon seasoned salt

Juice of 2 large lemons(about 1/2 cup)

1/4 cup low-sodium chicken stock

1 Tablespoon Dijon mustard

1 Tablespoon chopped fresh tarragon(or 1 teaspoon dried)

Large non-stick skillet

Directions

In the large, nonstick skillet, heat oil over medium heat.

Sprinkle fish with seasoned salt and place in hot pan

Cook 2 minutes on first side until golden brown.

Use a wide spatula to turn the fish carefully; cook until second side is golden brown.

Remove fish to serving platter.

Add lemon juice and chicken stock to pan and use a wooden spoon to scrape up any bits of fish from the pan.

Whisk in mustard and simmer for about 1 minute.

Stir in tarragon.

Pour sauce over fish

Enjoy!

I love Tilapia also and this recipe is fantastic! I have never had it with chicken stock so that makes it interesting to me.
