How to make it

  • In the large, nonstick skillet, heat oil over medium heat.
  • Sprinkle fish with seasoned salt and place in hot pan
  • Cook 2 minutes on first side until golden brown.
  • Use a wide spatula to turn the fish carefully; cook until second side is golden brown.
  • Remove fish to serving platter.
  • Add lemon juice and chicken stock to pan and use a wooden spoon to scrape up any bits of fish from the pan.
  • Whisk in mustard and simmer for about 1 minute.
  • Stir in tarragon.
  • Pour sauce over fish
  • Enjoy!

    I love Tilapia also and this recipe is fantastic! I have never had it with chicken stock so that makes it interesting to me.
