A simple salad which can be serve with grill chicken, meat or prawns.

Ingredients
  • 1/2 peel pineapple
  • 1 peel cucumber
  • 1 peel carrot
  • 1 onion, thinly sliced
  • 2 chilies, seeded and thinly sliced
  • 10 mint leaves, torn to small pieces
  • 1 tbsp of chopped coriander leaves
  • 2 tbsp of lime juice
  • 2 tbsp of rice vinegar
  • 1 1/2 tbsp sugar
  • salt

Directions
  1. Cut pineapple, cucumber and carrots into 3 in long strips.
  2. Put in a bowl.
  3. dd in onion, chilies, mint leaves, coriander leaves, lime juice, vinegar and sugar.
  4. Stir and mix well.
  5. Add salt to taste.
