This recipe comes from the McCain Estate in Garland, Texas. I have not made it, but it is marked as a family favorite and since I LOVE beets I intend to make it very soon. Enjoy

Ingredients
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 cup pineapple tidbits undrained
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 2 cups sliced red beets drained

Directions
  1. Combine brown sugar, cornstarch and salt in saucepan.
  2. Add pineapple stirring constantly until thick and bubbly.
  3. Add butter, lemon juice and beets then heat thoroughly for 5 minutes.

Undecided on this dish. Not to crazy about it hot. Maybe it will taste better cold.
