How to make it

  • Preheat oven to 400 degrees.
  • Combine flour, sugar, cocoa, baking powder and salt.
  • In another bowl mix the milk, egg and oil.
  • Stir the wet into the dry until just moistened.
  • Mix together 1 cup of the coconut with the Eagle Brand and vanilla.
  • Spoon 2 tbls of the batter into each greased muffin cup or liner.
  • Place 2 tsp of the filling in the center of each. Do not spread.
  • Top with remaining batter.
  • Sprinkle tops with remaining coconut.
  • Bake 20-22 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes in pan then remove to a wire rack.

    Made this for the January, 2017 Muffin Challenge - I decided on this recipe because I had some left over condensed milk to be used. The only change I made was to sprinkle some fresh coconut on top of the muffins once they were removed from the oven. Thank you Michelle73 for sharing this TOH recipe! It is the BOMB! Cocoa Macaroon Muffins Added to the I Made It II group!

    Okay, I finally tried making these with a few different ingredients like I had thought of changing below in the alterations section. They turned out wonderful and my family gobbled them down! They said they were the best muffins I've made yet. Here's what I changed:

    2 cups Whole Wheat Pastry Flour (in place of all-purpose flour)
    1/2 cup LESS 3 T. honey (in place of sugar)
    1 cup LESS 3 T. soy milk (in place of milk)
    1/3 cup extra virgin coconut oil (in place of vegetable oil)
    I did use unsweetened natural coconut.
    **I ended up just using the sweeten condensed milk as recipe called for because of simplicity sake.**
