I'm just trying to figure out how to make them more healthy without the sugar. I'm wondering if I could try using agave syrup instead of the sugar, but what to do about the sweetened condensed milk???
Whole wheat pastry flour for the flour. Extra-virgin coconut oil instead of the vegetable oil.
And using unsweetened coconut.
I'm going to give it a try...if anyone has any ideas for the milk, please give me a suggestion.

Okay, I finally tried making these with a few different ingredients like I had thought of changing below in the alterations section. They turned out wonderful and my family gobbled them down! They said they were the best muffins I've made yet. Here's what I changed:
2 cups Whole Wheat Pastry Flour (in place of all-purpose flour)
1/2 cup LESS 3 T. honey (in place of sugar)
1 cup LESS 3 T. soy milk (in place of milk)
1/3 cup extra virgin coconut oil (in place of vegetable oil)
I did use unsweetened natural coconut.
**I ended up just using the sweeten condensed milk as recipe called for because of simplicity sake.**
