Found this recipe while cleaning my recipe box. Yummy!

Ingredients
- 1 cup uncooked oats
- 1 stick butter
- 1 1/4 cup boiling water
- 1 1/2 cup honey
- 1 teaspoon vanilla
- 2 eggs
- 1 3/4 cup sifted whole wheat flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Directions
- Put oats, butter and boiling water in large bowl and let set for 20 minutes.
- Add honey, vanilla and eggs.
- Add rest of ingredients and pour into a greased & floured long pan
- Bake 30 - 40 minutes at 350 degrees F
- Excellent plain or iced with a caramel coconut frosting
