How to make it

  • Preheat oven to 400 degrees
  • . Heat a skillet over medium-high heat. Add onion, bell pepper & beef; cook 5 minutes or until meat is browned, stir to crumble. Stir in salsa, chipotle sauce, beans & tomatoes; cook 5 minutes, stir often Stir in 1/2 cup cilantro. Spoon beef mixture into a 3-quart casserole dish.
  • Combine flour, cornmeal, sugar, baking powder & salt in a bowl. Add 1/4 cup cilantro, milk, butter & egg; stir until well-blended. Spoon batter over beef mixture; spread evenly, bake for 35 minutes or until golden.
  • Serves 8.

    I make Tamales like this but never as a pie. I will have to try this. Love the flavors going on here they are nice and spicy.
