Spinach and Artichoke Dip with Homemade Pita Chips

- 1/2 stick butter shopping list
- 1 large shallot minced shopping list
- 2-3 cloves garlic minced shopping list
- 1/4 cup flour shopping list
- 1 pint heavy cream shopping list
- 1/2 teas.salt shopping list
- 1/4 teas. pepper shopping list
- dash of worcestershire sauce shopping list
- juice of 1/2 lemon shopping list
- 1/2 cup shredded cheddar cheese shopping list
- 2/3 cup shredded parmesan cheese shopping list
- 2 10 oz. pkgs. spinach thawed drained well and chopped ( I use 1/2 a large bag of fresh spinach blanched for a couple of min., water squeezed out and chopped) shopping list
- 1 14 oz. can artichoke hearts drained and chopped shopping list
- For the Pita chips: shopping list
- 1 12 oz pkg. pita bread approx. 6 pieces shopping list
- 1/4-1/2 cup olive oil shopping list
- 2 cloves garlic smashed shopping list
- salt and pepper shopping list
How to make it
- Melt butter in a 2 quart or so sauce pan
- Add Shallots and garlic and cook to soften
- Stir in flour stirring a couple of min. to darken a bit
- pour in Heavy Cream turn up heat alittle and stir till thickens
- Add cheeses and stir to melt
- Add salt, pepper and Worcestershire sauce and Lemon juice
- Add Spinach and artichoke hearts and mix well
- pour into baking dish and bake at 425 for 15-20 min til bubbly and browning alittle
- serve with pita chips
- For the Pita chips:
- Pour olive oil into small dish and add garlic cloves salt and pepper and let marinate while cutting the bread
- Cut the each piece of Pita bread into 8 triangles
- Brush pieces of bread with the flavored Olive oil
- Lay out on cookie sheet and bake at 375 for 10-12 min. until browned and crisp
- take out of of oven and sprinkle with salt and alittle Pepper
