Chocolate Glazed Banana Cake

- 1/2 cup soft butter or margarine shopping list
- 1 1/4 cups sugar shopping list
- 2 eggs shopping list
- 1 1/2 cups all-purpose flour shopping list
- 1/2 tsp. baking powder shopping list
- 1/2 tsp. baking soda shopping list
- 1 1/2 tsp. salt shopping list
- 3 Tbsp. buttermilk, sour milk or sour cream shopping list
- 2 very ripe bananas, mashed (about 3/4 cup) shopping list
- 1/2 cup chopped English or black walnuts shopping list
- ----Butterscotch-chocolate Glaze---- shopping list
- 1/3 cup butterscotch chips shopping list
- 1/3 cup chocolate chips shopping list
- 2 tbsp. whipping cream shopping list
How to make it
- Preheat oven to 350.F
- Cream butter and sugar until blended. Add eggs and beat until fluffy.
- Stir together flour, baking powder, baking soda and salt. Add to creamed mixture along with buttermilk and mashed bananas. Mix just until batter is smooth and well blended. Stir in 1/4 cup of the nuts.
- Spread in a buttered 9-inch square cake pan.
- Bake for 30 to 35 min. or until cake feels firm to the touch.
- Meanwhile, prepare Butterscotch-Chocolate Glaze. Spread on cake after cake has cooled. Sprinkle with remaining nuts.
- -------Butterscotch-Chocolate Glaze--------
- In top of double boiler, mix 1/3 cup butterscotch chips and 1/3 cup chocolate chips with 2 Tbsp. whipping cream. Place over hot, not boiling, water. Stir until chips have melted and mixture is smooth. Spread while warm over cake. Do not overheat or chips may harden.
