This goes especially well with dinner soups and stews like Chili and Pasta Fagiole and adds some colorful vegetable servings to your menu.

Ingredients
  • 1 7.5 Ounce Box Corn Muffin Mix such as Martha White or Jiffy.
  • 10 Ounces Frozen Spinach, Thawed Chopped And Drained
  • 2 Whole Eggs
  • 1 Stick Margarine
  • 8 Ounces Cottage Cheese

Directions
  1. Thaw, drain and remove most of moisture from Spinach. (I always give it a final squeeze in a paper towell.)
  2. Mix spinach well with remaining ingredients .
  3. Bake in a 9x9x2 pan in a 350 degree oven for about 40-45 minute
