Spinach Corn Bread

- 1 7.5 Ounce Box corn muffin mix such as Martha White or Jiffy. shopping list
- 10 Ounces frozen spinach, Thawed Chopped And Drained shopping list
- 2 Whole eggs shopping list
- 1 Stick margarine shopping list
- 8 Ounces cottage cheese shopping list
How to make it
- Thaw, drain and remove most of moisture from Spinach. (I always give it a final squeeze in a paper towell.)
- Mix spinach well with remaining ingredients .
- Bake in a 9x9x2 pan in a 350 degree oven for about 40-45 minute
